2-3 chopped scallions (green onions)
2 tablespoons chopped or torn parsley
Optional: 1 can of chickpeas or protein/whole grain of your choice.
Dressing
2 tablespoons extra virgin olive oil
2 tablespoons lemon juice
1 tablespoon tahini
1 tablespoon honey
1 chopped garlic clove
¼ teaspoon paprika or cumin
¼ teaspoon salt
